Protein-Packed Breakfast Hash

This breakfast keeps everyone full for hours and works just as well for dinner.









Ingredients

  • 2 medium sweet potatoes, diced small

  • 1 tablespoon avocado oil

  • 1 bell pepper, diced

  • 4–6 eggs

  • Sea salt and pepper

  • 1 avocado, sliced


Instructions

  1. Heat oil in a skillet over medium heat.

  2. Add sweet potatoes and cook for 10–12 minutes, stirring occasionally.

  3. Add bell pepper and cook 3–4 more minutes.

  4. Crack eggs into the pan and scramble gently.

  5. Season with salt and pepper and top with avocado.
